Tuesday, What a Day

Happy Tuesday!

So I totally remembered to bring my camera with me today, however I didn't stay the whole time at school, so we missed that part again.

However I remembered to keep track of my day a little better so here we go!

When I was packing my lunch today, I noticed two things.

1. We have a ton of left over soda from our wedding.

2. My hummus cups exploded.


 Sad. :( Moving on, I went to school. Only 2 days left this quarter! Turns out the kid that sits next to me in Nutrition 101 played baseball with my husband, and with his brother. What a world huh?

When I got home I did a little cleaning. I am now going to share with you something I think everyone should know, but have been surprised by how many people don't.

Laundry.
1. Lay the shirt out flat, backside up.


2.Fold the sleeves in to make the shirt into a rectangle.
3. Fold each side in 1/3 of the way so one side overlaps the other evenly.


4. Fold the bottom and top in 1/3 so they also overlap evenly


Okay - rant over, stepping off of my soap box and moving on with my night. I decided to marinade our dinner in some homemade marinade.

 1 1/2 tsp seasoning
 About 2 Tablespoons Olive Oil

Mix together and pour over chicken thighs.
Cover and marinade for a few hours. I had this in the fridge for 4 hours.

At this point, I talked on the phone with my bestie for an hour and swept and mopped our house. Pretty dull day today if you ask me. While deciding on what else to have with our dinner, I did decide to test out our Dollar Store scalloped potatoes
We also had some honey jalapeno shrimp the hubby's mom gave us so I thought these would go good with dinner tonight.
I grilled them on the new griddle that Ryan and Tiff got us for a wedding gift. This bad boy is going to be a kitchen staple, I can already tell. I not only cooked our shrimp on here, I also cooked our chicken.


They cooked up pretty well, but just to be safe, after a few minutes on each side, I popped them into the oven under broil for an extra 5 minutes.

And there is our dinner! The dollar store potatoes weren't all that bad, they were really good actually! Have a great night everyone!

So I have really been addicted to itsjudytime lately. The other day she posted a video that particularly made me literally laugh my azz off ;)

Last night we just happened to come across the cookies in Costco! I started laughing hysterically saying Krusty Azz cookies, I think I want some!

Well guess what? We got them!



 One thing about these cookies that made them really easy was that they only require you to add 2 things. Eggs and oil.

The dough is really stiff, I was a little worried when we first started out. But they turned out looking amazing!

My only complaint is that the salt isn't the kind in the picture, it is the kind you use at the table. But the cookies are absolutely delicious. The richness of the chocolate mixed with the sweet caramel and the salt is almost perfect. Only one thing made them better:

Cool Whip! (I like it in place of ice cream)

A Typical Monday

So I had a few things that I wanted to share today to kind of give you a little peek into what I do during the day. Hopefully soon I will start remembering my camera with me so you can see a little bit more of my day to day rather than just read it.

So my day started at about 3:00 a.m. when I was woken up by a ton of sirens going by. I guess it was a marijuana grow operation that went up in flames early this morning. My husband drove by this morning on his way to work and was kind enough to tell me about it. After that, I got up at 5:30 and shortly hit the reality that I have to wear my glasses until I get new contacts because like a dork I forgot to order new contacts before I ran out! RRR. So I took the opportunity to have a little fun with my eyeshadow.

Speaking of my eyeshadow and cosmetics and whatnot - I did a face mask last night. It was quite comical because I was wearing my little girl footy pajamas and my husband kept saying he couldn't take me seriously.  I stocked up on a bunch of the ones I did on my wedding night - Thank you Laura - for getting me hooked. But somehow I got this fruit smoothie one that I didn't particularly like.

I don't like the ones that dry, they make my face feel tight, and this one dried. It took forever to rinse off too. Note-to-self: make sure not to use this fruit smoothie on my face again.

That aside, what else did I do today you may be wondering?

It is the last week of classes before finals, so I went to class then studied in the library for 2 hours. I know, bo-ring! But here is where the fun starts. I started prepping dinner!

Step 1.) Pour a glass of wine
Barefoot Moscato. Actually a lot sweeter than my preference, but I am not complaining. It's wine and it's open.

Step 2) Make salsa!
Probably doesn't look as good in this picture as it could, and again, I forgot to take pictures as I went. I will make this again and post the recipe soon.

Step 3) Start slow-cooking dinner!!!!


Actually simpler than pie tonight. Buy ribs at Safeway 50% off because they needed to be sold by today. Well I am making them for dinner tonight so yes please! $3 for dinner? Can't beat that. Really. Next pour half a bottle of bar-b-que sauce into crock pot with ribs. Flip the ribs around so they are covered in sauce. Set on low and leave until dinner. EASY! I have been craving ribs lately and since I knew we had a few things planned to do this afternoon I wanted something that wouldn't require a whole lot of prep.

4) Get chased by UPS man (who wasn't too horrible looking - too bad Mr. UPS Man, I am married!) while checking mail. Guess what is here? My AVON yippee.

My best friend was telling me how fabulous the peppermint bubble bath was so I thought I would do a little comparison between the peppermint and candy cane, and my good friend Kirstee ordered some perfume. Gotta love being an Avon rep ;) (www.youravon.com/jcrosby-toms)


5) Cook The Rest Of Dinner
 White Cheddar Shells and Italian Veggies (Cauliflower, Carrots, Italian Green Beans, Lima Beans and Zucchini.)

Dinner Made From Thanksgiving Left-Overs

Friday night I made leftovers into a fun dish - Pumpkin Curry Potato and Turkey Croquettes! MMMM! Here is my recipe





1 Cup Left-Over Mashed Potatoes

About 1/2 Cup (sort-of) Shredded Turkey Left-Overs - warmed works best
2 Tbsp Pumpkin Puree
Curry Seasoning to taste
1 egg beaten
Bread Crumbs (fresh works best)
oil for frying

  • Mix everything except oil and bread crumbs in food processor and mix to desired consistency. I like to just mix until combined so my croquettes are nice and crumbly and you know everything that is in them when you take a bite
  • Heat oil for frying
  • Put bread crumbs on plate
  • This is the messy part. Make a potato patty, cover with bread-crumbs then place in oil. I do this one at a time so they dont fall apart from sitting.
  • Fry each side a couple minutes until golden brown
  • Toast in convection oven under broil for about 7 minutes
Served in photo with yellow mustard, rice, asparagus stir-fry, cinnamon apples, and some jazzed up gravy.

Left over gravy from Thanksgiving with a little extra chicken broth and pumpkin puree.

Welcome

Welcome to a day in the life as Flipchin O'Reiley. Join me as I share my day-to-day doings as a student and wife. I have been experimenting with blogs for the past year and recently created one for our friends and family to follow along as we planned our wedding. I finally decided I don't want my blog to be a specific theme like last years local mealtime, and JC's Crafty Creations which were my original experiments. Here I can combine the two, and share the many aspects of my daily life as well. I hope you are entertained following along with me as I am living it!
